2 x Large red peppers
50ml Olive oil
1 to 2 Tsp Meridian peanut butter & baobab
Juice of half lemon
1 tsp x Cumin seeds
1 x African birds eye chilli deseeded and roughly chopped
Pinch of salt & black pepper                                                                                                                                                                                                                                                                                                                                    


Preheat your over to 240˚C/Gas mark 9.
Roughly cut the red peppers into large chunks, coat with olive tray and place skin side up on a baking tray, place in the oven.

Roast pepper until they begin to turn a little black.

When peppers are cool add all the other ingredients to blender/food processor and whiz until lovey and smooth. Taste and add more salt or lemon juice if needed.
Serve with selection of Artisan breads.
