Chicken and Prawn Brazilian Xim Xim

4 chicken breasts

1 red pepper

1 Jar Meridian Xim Xim sauce

80g king prawns

small bunch of coriander


Pre-heat the oven to  180C Fan.

Lay the chicken breasts in an oven dish. Slice the red pepper and tuck around the sides and in between the chicken.

Pour over the Xim Xim Peanut sauce then ⅓ fill the jar with water and shake to release all of the sauce and pour over the chicken.

Cook for 30 minutes (depending on the size of the chicken breasts.)

After 30 minutes, throw in the large prawns and return to the oven for 5 minutes.

Check that everything is cooked through then serve with rice and sprinkled with coriander.
