Ugne's Cashew Energy Cookies

These healthy cookies are full of fibre and good fats from Meridian's 100% cashew butter. Filled with nuts, seeds and berries, these cookies make a great children's (or grown up!) afternoon tea treat with a glass of milk or cocoa.

INGREDIENTS

170g jar of Meridian crunchy cashew butter

25g milled flaxseed

1 medium ripe banana, around 110g

50g Sukrin almond flour

1/2 tsp baking powder

20g brown rice flour

15g goji berries

35g finely chopped nuts of your choice

35g 4 seed mix (like linseed, pumpkin and sunflower seeds)

50g raisins

2tbsp water

3tbsp Meridian agave syrup

100g dairy and sugar free chocolate chips (optional)

 

METHOD

1. Preheat oven to 180’C and line baking sheet with parchment paper.

2. Grab a large bowl, put all ingredients in it and give it a good stir with a wooden spoon until all combined.

3. Scoop the cookie dough with ice cream scoop to make them even. Flatten slightly with a fork and pop in a preheated oven for 10-12 minutes (or until edges slightly browned)

4. Let cool completely on the baking sheet.

Keep in an air tight container and ENJOY!
