No bake peanut butter squares

Our friends at Seasoned Cookery School have devised the most divine recipe for peanut butter squares (which you don't even have to bake!) Here's the recipe...

  • 300g Rich tea biscuits
  • 200g Butter
  • 300g Meridian crunchy Peanut butter
  • 100g mixed fruit
  • 200g Plain chocolate
  • 10ml Oil
  • 50g sugar
  • 4 tablespoons of water
  • One good quality, straight sided 8″ tin.


1. Prepare and line your tin with grease proof paper and grease the sides of the tin. 

2. Put the rich tea biscuits into a large bowl and crush the biscuits until into fine pieces (with a large rolling pin, or you could do this in an electric blender).

3. Melt the butter, slowly in a pan or in the microwave.  Add the butter into the biscuit mixture and then stir in the peanut butter and raisins if you’re using them. Stir until the mixture is thoroughly combined.

4. Spread the combined mixture into the bottom of your prepared tin, smooth the top with the back of a metal spoon and press down hard. 

5. Place in the fridge while you make the chocolate topping.

6. Pre weigh all of your liquid ingredients to make it easy for you. 

7. Then gently melt the chocolate in a bowl over water or in a microwave. (Using a microwave works very well if you chop up the chocolate into small pieces before melting and then melt on low power, checking and stirring every 10-20 seconds).

8. When the chocolate is nearly melted stir in the sugar and stir until dissolved (if using a microwave you may need to heat it gently to do this).

9. Add the oil and stir until glossy, finally adding the water – this will make the mixture go slightly darker.

10.Take your base mixture out of the fridge and pour your chocolate mixture on top. Tip the tin so the mixture spreads out evenly

11.Leave your delicious looking peanut square tray bake to set in the fridge.

12.Once set, slice into even squares and ENJOY!
