Mincemeat & almond crumble bars

Our friend and talented recipe blogger extraordinaire Spamella B has created these delicious treats which are ideal for feeding the crowds this Christmas!

For the base and crumble:

100g gluten-free flour

100g instant polenta

50g oat flour

50g ground almonds

75g coconut sugar or stevia

1 teaspoon mixed spice

200g butter or dairy-free spread

1 teaspoon almond extract

Large handful of flaked almonds

2 tablespoons maple syrup


For the filling:

1 x jar Meridian Foods organic mincemeat

Zest of 1 orange

1 small apple, grated


Get baking!

1. Preheat the oven to 180 degrees C and grease and line a square or rectangular baking tin with greaseproof paper.

2. In a large bowl mix together the flours, instant polenta, ground almonds, sugar/stevia and mixed spice.

3. Add the butter/spread and use your hands to rub this into the dry ingredients to create a crumble mixture. Place half of this into another bowl.

4. With one half, add the almond extract and a drop or two of water to allow the mixture to form a dough. Press this into the tin with your hands to cover the base evenly.

5. Mix together the mincemeat with the orange zest and grated apple, then spread this over the base to cover, making sure you reach the sides.

6. Now add the flaked almonds and maple syrup to the other half of the crumble and mix with your hands to form a slightly sticky mixture.

7. Sprinkle this over the mincemeat in one layer to cover and press down gently to pack it all in.

8. Bake for 30-40 minutes until golden brown. Leave to cool completely in the tin (this helps it to ‘set’) then cut into 12 bars or squares. Enjoy!


Keep any remaining slices/bars in an airtight container for up to 3 days.
