Almond butter & jelly muffins

Our friend The Healthy Beard, has created some deee-lightful vegan almond butter & jelly muffins and they couldn't be easier to make! Give them a go....

Serves: 8
Takes: approximately 40 minutes
What you need:

1 3/4 cup oat flour

1/2 cup ground almonds

1/2 cup of Meridian squeezy agave syrup

1 tsp bicarbonate or soda

1 tsp baking powder

1 cup almond milk

2 tbsp white vinegar

2 generous tbsp Meridian almond butter

2 generous tbsp Meridian strawberry fruit spread + extra for decorating

8 almonds

What you do:

Begin by pre -heating the oven to 180 degrees.

In a large bowl combine all of the dry ingredients and whisk together to remove any lumps (you can sieve instead).

Add the milk and vinegar and mix together thoroughly.

Add the almond butter and strawberry spread and mix further.

Using silicone cases and an ice-cream scoop, transfer the muffin batter evenly between eight muffin cases.

Add a little bit of strawberry spread and an almond in each muffin and bake for 18 minutes.

Remove from the oven and let the muffins cool for approximately 30 minutes, slice the muffins in half and spread almond butter and strawberry spread.
