Almond Butter Caramel Apples

A healthier alternative to the traditional straight up sugar coated apples. A childhood favourite made even more delicious if we do say so ourselves!

A healthier alternative to the traditional straight up sugar coated apples. A childhood favourite made even more delicious if we do say so ourselves!

Preparation Time - 10 minutes
Serves - 5-6
Ingredients

5-6 small apples of choice

¼ cup (60ml) Meridian Foods Maple Syrup

¼ cup (60g) Meridian Foods Smooth Almond Butter

2 tbsp (28g) coconut oil, melted

Pinch of Pink Himalayan Rock Salt

1 tsp vanilla extract, optional

1 tbsp of cookie crumbles, granola, nuts, desiccated coconut, seeds… per apple for coating the caramel!

Directions

Whisk together maple syrup, almond butter, coconut oil, salt and vanilla extract if using.

Place into the fridge for 5-10 minutes to firm up a little.

Remove stalks from apples, stick a wooden skewer or stick into the centre of each apple.

Coat apples in almond butter caramel.

Roll in desired toppings/sprinkles/crunch. Place on a plate or tray lined with non stick baking paper. They can be eaten straight away or placed into the fridge for up to one week. Remove from the fridge for 5 - 10 minutes before eating if you want the caramel to soften.
