Chocolate & Almond Macarons 

Recipe from Seasoned Cookery School (link: and Beca Lyne Pirkis who teaches Seasoned's half day Macaron course. 

Makes approx 18 macarons  

110g Icing Sugar

85g Ground Almonds

2 Egg Whites

50g Caster Sugar

8g Cocoa Powder


1)    To make the macaron shells, blitz the icing sugar, cocoa powder and ground almonds in a food processor until combined and finer in consistency.

2)    Mark out 1 ½ inch rounds onto silicone paper and place onto a baking tray.  

3)    Place the egg whites with a pinch of salt into a mixing bowl, or bowl of a stand mixer and whisk until the egg whites start to froth.  Gradually add the caster sugar until the whites turn stiff and glossy.  Mix the egg into the icing sugar, cocoa and almond mixture until it reaches a ribbon consistency.  Be careful not to over mix otherwise the mixture will be too loose to pipe & a skin will not form. 

4)    Scrape the mixture into a piping bag and pipe rounds onto the ready prepared baking sheet.

5)    Leave to set for at least 15 minutes or until the macarons form a skin (The time taken will depend on the humidity & temperature). Meanwhile, preheat the oven to 130C.  Bake on the middle shelf for 12-15 minutes then remove from the oven, cool slightly before peeling off the sheets and cooling completely on a wire rack.

To make the filling:

65g Almond Butter (Smooth Peanut butter is also delicious)

100g Cream Cheese

15g Icing Sugar


1)    In a mixing bowl, beat together the peanut butter, cream cheese and icing sugar until smooth. Place in a piping bag until ready to use. 

2)    Fill the remaining shells with the peanut butter filling and sandwich together with the tops.  Keep in the fridge in an air-tight container until needed, eat within 2-3 days at the most.

13. Winner will be chosen: at random by software, from all entries received and verified by Promoter and or its agents.

14. The winner will be notified by email or Facebook within 28 days of the closing date. If the winner cannot be contacted or does not claim the prize within 14 days of notification, we reserve the right to withdraw the prize from the winner and pick a replacement winner.

15. The promoter will notify the winner when the prize has been sent.

16. The promoter’s decision in respect of all matters to do with the competition will be final and no correspondence will be entered into.
