The incredible African Chef, Malcom Riley tells us why Baobab is such a special ingredient. 

“Baobab is a fruit like no other and is a chef’s dream ingredient! As well as its renowned nutritional properties, it has a huge positive impact on rural communities in Southern Africa, providing a source of food and cash-earning potential.

I’ve been cooking with baobab for as long as I can remember, and this amazing impact on local people was one of the key attractions to me. It’s great that Meridian has introduced baobab to its product range and I hope it helps drive awareness and popularity of the fruit. It’s estimated that over 250,000 tonnes of baobab fruit go to waste in Southern Africa which shows the potential that it has.


Baobab’s sustainability is almost unrivalled, and it grows naturally on the landscape with no need for any water or fertiliser - it can produce even during a drought. The harvesting process is fairly simple; it requires the baobab pods to be cracked open and the dry fruit pulp to be separated from the internal fibres and then sieved.


Baobab is classified as a superfood and has fantastic nutritional properties including six times more Vitamin C than an orange and twice the calcium of milk. It’s both gluten free and suitable for vegans which means it can provide essential nutrients to consumers, regardless of dietary requirements.


It’s a fruit I predict will become popular with vegans as it’s often very difficult for them to find food sources that are rich in calcium and have high iron and potassium content. There are of course supplements available, but these can often leave people with upset stomachs or a bloated feeling. 


Another notable benefit of baobab is its versatility. With the fruit being in a powder format, it can be used in a variety of ways including:

Baking as a general cooking ingredient

Thickening soups, sauces and gravy

Added to smoothies / yoghurts

Making jams

As an emulsifier

My long-term dream for baobab is for it to become a staple ingredient in people’s cupboards. I know it’s got a long way to go but this vision is one of the key reasons that I do what I do and hopefully with more endorsements from celebrity chefs, its popularity and awareness can continue to grow in Western society.”
