The Heathy Beard's Vegan gluten-free almond butter cookies

 

vegan oat cookies

Serves: 6

Takes: approximately 30 minutes

Ingredients:

2 cups of certified gluten-free oats.

2 tbsp Meridian almond butter

2 tbsp chia seeds

3 tbsp Meridian agave

1 tbsp raw cacao nibs + extra for decoration

1/4 cup almond milk

1 tsp baking powder

Coconut oil for greasing

What you do:

1. Pre-heat the oven to 180 degrees.

2. In a large bowl add all of the ingredients, mixing them thoroughly until all ingredients are combined.

3. Wet your hands and begin forming the cookies by rolling them and squashing them into cookie shapes.

4. Place the cookies on a greased tray and bake in the oven for 12 minutes.

5. While the cookies are in the oven baking, prepare the almond ganache.

6. Remove the hot water from the dates and place them into a powerful food processor or blender with the almond butter and agave and blend until you achieve a gooey consistency.

7. Once the cookies have finished baking, remove them from the oven and let them cool for approximately 30 minutes.

8. Dip half of the cookies in the almond butter ganache, sprinkle some raw cacao nibs and place them in a plate in the fridge for approximately 20-30 minutes.

9. Enjoy!
